Easy peasy pseudo Egg Drop soup ;)

Want a healthy inexpensive idea for lunch? It'll take less than 10 minutes. And until I realized how simple this soup was I'd be the one who would order $30 worth of Chinese carryout just to satisfy my Egg Drop soup craving.

So here it goes, there's 4 ingredients:
  • 4 cups of water
  • 8 tsp Chicken broth base powder
  • 1/4-1/2 cup frozen vegetables
  • 2 eggs


Preparation:
  1. Bring water and broth base to a boil over med-high heat.  Add in vegetables, amount depends on how hardy you want this soup to be.
  2. Reduce heat to medium and lightly boil for 5-7 minutes, or until vegetables are cooked to your liking.
  3. Beat the two eggs together in another bowl and SLOWLY pour into the soup, stirring gently.
  4. Remove from heat, SERVE!
This amount will usually make 3-4 servings, depending on how hungry you are that day.  A perfect lunch idea is 1 cup of this soup, a small tossed salad and half of a sandwich.
