A phenomenal girls 6th birthday party!



Story time with Belle

My daughter is in Kindergarten and she was invited to a Princess Birthday Party this past Sunday.  The invitation said beautiful dress up outfits are welcome, and encouraged so even though the party wasn't until 2 that afternoon, Lillie practically rolled out of bed INTO her costume.  We arrived and all the munchkins looked great!  While I was talking with the hostess I came to find out that she had found this deal on Living Social.  So while all the adults were gathered around the snack table, there was a knock at the door.  In walked Belle!

All the little ladies had a blast!  Belle started by reading a story about her from a big book of Disney Princess stories.  Then they played dress up.  Belle, had a huge suit case (she literally rolled it in behind her.) and it was packed full of a few high heels, necklaces, crowns, dresses, scarves and beads.

Then, she did face painting.  All the little ladies lined up so nicely along the table and there were some chocolate dipped strawberries to munch on while in line.  They patiently stood watching each girl get a creative design on her face.

Then all the girls came back into the living room and Belle did a few magic trick, one of which they pulled a "rainbow" (which was a LONG rainbow ribbon) from a bag. She gave all the girls a sprinkling of magic (glitter) and the put it into the bag while they thought about all the colors they see around the room.  They then put all their "magic" into the bag and she shook it around and pulled out the long ribbon. Did the same thing with a coloring book she had brought "to color in on her flight on the airplane to get here."  The kids love the magic tricks and it was so much fun to watch their faces.


So at the very end of the magic show, Belle asked all the princesses to line up and do a parade for all the mom's.  It was beautiful!

LOVE! LOVE! LOVE this idea!  I had never been to a party like this before, but I think for Lillie's 6th birthday I may do something like this.  Even if it's just paying one of my friends to dress up as one of the Disney princesses.  Lillie has been bugging me constantly to let her have a costume party and this has given me plenty of ideas to have an organized costume party. 



The hostess also mentioned that they offered a pirates party for the boys. Which is also a wonderful option. So there ya have it, another great birthday party idea!

They did cupcakes with this layout, but had yellow (lemon) frosting on white cupcakes.  This is a picture of a similar layout.  The top was just a play castle but it was absolutely perfect!

Sausage and veggie skillet! One of my husband's top 10 favorite meals




So this is usually on of my go-to dinners, the hubby loves it, the kids really like it and it's overall pretty healthy!

Sausage and Veggie Skillet
  •  2 Italian Sausages (You can do more if you care to, I have this thing about sausage so it's usually just my hubby and kids eating it.)
  • 3 cups Bowtie or Penne pasta
  • 1 Zucchini
  • 2 Squash
  • 1 Tbsp Butter
  • 1 packet Skillet Toss Mix: Garden Style Recipe
  1.  Slice sausage and cook in small skillet.
  2. Boil pasta al dente, drain and set aside.
  3. Saute veggies in large skillet over medium heat, in butter, al dente
  4. Toss the pasta and seasoning packet into the large skillet with the veggies.
  5.  Serve the pasta and veggies with sausage piled on top.
This recipe is super easy, pretty healthy aside from the sausage.  And it's fast!

Enhance your Kale: A tasty, healthy snack!

Ready for a way to get some great nutrients in a way you've never imagined.  Are you a snacker tired of the old potato chips and popcorn, but still hungry?  Yeah, I would encourage you to grab a bunch of Kale, Olive Oil spray, and Seasoning Salt.

It takes about 30 minutes to make and is so simple, my 2 year old and 5 year old love to help with it.  And it's only around the house for about 30 minutes after it's cooled to when it's completely gone.

Experiment with this, you can use different flavored sprays and different seasoning. Oh, maybe even some Parmesan cheese?  Post your results and favorite flavors here!



Kale Chips:
  • Bunch Kale
  • Olive Oil Cooking Spray
  • Sprinkling of Seasoning Salt
  1. Preheat oven to 275*
  2. Start with breaking the Kale off the stems and drop in large bowl, spray cookie sheet with Olive Oil.  Lay the Kale out on the cookie sheet and spread out so the leaves don't over by very much.
  3. Lightly spray the Kale chips with Olive Oil and spring with Seasoning Salt (or substitute)
  4. Put in the oven for 25-30 minutes until the leaves are dried out but before they turn too brown.
  5. Let cool, and ENJOY!!!!!!
Try different flavors if you're bold enough!!!!!

Honey Lime Chicken? Yes, please!

Are you looking for what to do with the chicken breast you took out to thaw for dinner?  Here's a very delicious, SUPER EASY recipe that will have everyone's mouth watering the next time they see that on the menu!




 It does have a tiny kick to it since there's cayenne pepper in it, but my kids ate it just fine and my husband loved the spicy and sweet flavor.  May substitute it with some seasoning salt...if you do, comment and let me know what you think!




Paired it with some mini bell peppers, a hearty salad of romaine, tomatoes, cucumbers, and garbanzo beans and Voila!!!! Delicious filling meal!



Honey Lime Chicken
  • 1/3 cup Flour
  • 1/4 tsp Cayenne Pepper (Use less or cut out all together if you're feeding it to little ones)
  • 2 large Boneless, Skinless Chicken Breasts, cut in to strips
  • 1 Tbsp Butter
  • 2 Tbsp Lime Juice
  • 2 Tbsp Honey
  • 1 Tbsp Brown Sugar
  • 1 tsp Worcestershire Sauce
  1. In a large resealable plastic bag, combine flour and cayenne (or substitute).  Add chicken a few strips at a time and shake to coat.
  2. In a skillet, drop in butter and brown chicken on all sides 
  3. Combine lime juice, honey, brown sugar and Worcestershire sauce then pour over chicken.
  4. Cook 1-2 minutes until sauce is thickened and chicken strips are cooked through.
Yield: 2 Servings

Flour and Cayenne pepper, I mixed it in a bowl instead of wasting a plastic bag.

I flipped some of the strips, ready to flip the others, you can see where they had started to brown.

4 Tips to a Good Swimmer--Beginner's Edition


  1. One thing I can not stress enough is if you're child is under 5 years of age, when you're in the pool or bathtub, do not let them see you wipe the water off your face because this gives them the idea that it's bad for it to be there.  I can't tell you how hard it is to get a child to overcome this and in my experience it accounts for probably 95% of the reasons why they don't put their face under water.  
  2. A tip to help them get into blowing bubbles: invest in a few ping pong balls, and some plastic straws and have them BLOW through the straw into the water to move the ping pong balls around.  They'll love this!  And how do you get them to blow out their nose while under water?  Have them hum, just have them go under and hum to themselves. You can even give them a melody you "want to hear" and once the connection is made that the water won't be going up their nose any more, VOILA you've solved the plugging their nose habit.
  3. When it comes to practicing kicking....remind them to keep their feet and legs straight.  I usually encourage them to use those "beautiful ballerina legs" or "strong soldier legs" and they usually will start singing or chanting out commands back--depending on their preference.  (My husband was in the Army and my daughter is a 5 year old Captain America fan, so she would be one I'd use the soldier legs with and you see this intense look come over her face as if she's actually a soldier.  Lol, love it!)
  4.  Get them comfortable with the front and back float.  Reinforce that, when that exhaustion has set in, in any situation-swimming laps or heaven forbid they get into trouble somewhere, they can ALWAYS roll to their back and get rest a second until they feel like they can continue.
  • Back float: if we are at an indoor pool I will have them concentrate on what's on the ceiling, if they're at that age where their imagination is running wild, this is where I encourage then to tell me what they imagine above them...brace yourself, some responses will be hilarious!  If outside I have them be on the lookout for anything that flies, birds, planes, helicopters, dragonflies, balloons, etc. I also have them push their stomach out towards the ceiling/sky while stretching their neck out like a tall giraffe.  This action, as well as encouraging them to concentrate on what's above them, will get them to the point where they can float by themselves.  I stroll around the pool with their hair on my shoulder and my hands on their back, one on the stomach too, if they're really nervous.
  • Front float: depending on their comfort level, I will either have them put their face under and blow bubbles until they want to come up, or give them a kick board or flotation device to hold out in front of them for them to get the idea of how floating feels.

I started with Lillie when she was 6 weeks old.  She's definitely a water baby!

I encourage you to take at least one parent/tot class if you're eager to get your infant in the water and start them early! This was her first time going completely under.  She did great! Another bonus tip? If you blow softly in their face before they go under, they will inhale the air and when they get into the water they won't inhale water. When they come up 90% of the time they won't be coughing...surprised maybe, but they just spend 9 months in a fluid environment and did great. But in all my years of teaching parent/tot classes, this can be the hardest emotional thing the parents do with their children but the ones who do get the courage up to do it, are thankful when it's done. I'm not saying to hold your children under or anything like that, I'm saying a light dip is fine. But absolutely NO LONGER THAN A SPLIT SECOND!!!!!!!! Once again, I strongly encourage you to take at least one parent/tot class if you're eager to get your infant in the water and start them early!


And it's back-story time ;)

When I was 15 I became a certified lifeguard upon completion of the Lifeguard and First Aid classes with the American Red Cross.  And also took the WSI (Water Safety Instructor) aide class to teach swimming lessons.  I also taught water aerobics classes, while I was pregnant with my daughter (not to toot my own horn or anything right ;) Anyway, I have had about 9+ years of experience teaching swim lessons.  I've taught at the local pool in my home town, a hot springs about 40 minutes from my home, a YMCA while residing in Wisconsin, two recreational centers in the Denver/Metro area, and a private neighborhood pool doing private lessons.  I've taught students that were over 60 years of age and just had to show themselves that "you can, in fact, teach an old dog new tricks" and started as early as six weeks old with parent/tot classes.
